REVIEW FROM GLOBAL GOURMET.com:
The entire "Red Plaid" team gathered together to test and perfect the recipes that made their way into this cookbook. The diverse team—some from large rural families, others single and urban, some old enough to have decades' worth of Red Plaid memories, others young enough to own Red Plaids without one stained or tattered page—sampled dishes together, and their collective ideas make this book relevant to the way people cook today. They retained tried-and-true classics while infusing the book with new recipes that make the most of new ingredients and multi-ethnic flavors that have found a permanent place in the pantry.

Plenty of new chapters have been added to meet the needs of today's home cooks, including new chapters on "Breakfasts and Brunches," "Sandwiches & Pizzas," and a chapter on "Convenience Cooking," with simple recipes based on excellent time-saving ingredients available at the supermarket today. And because canning has made a real comeback in the last few years, the chapter on "Canning and Freezing" has been thoroughly updated with new recipes, an overview of equipment, and step-by-step instructions that take readers through both canning and freezing with success. These techniques will allow home cooks to enjoy fruits and vegetables from the garden or farmers' market all year round, as well as save money by stocking up on the foods they love.

The team at Better Homes and Gardens paid special attention to creating recipes that allow readers to add their personal touch. "Make It Mine" recipes found in every chapter offer inspiring variations on classics like Lasagna, Burgers and Chili—home cooks need only to choose one item from each ingredient box, and voilĂ , they've created a one-of-a-kind family specialty. The "10 to Try" sections also provide a fresh spin on the tried-and-true. Why not try a new glaze on mom's classic meatloaf? Or spice up your simple Mac 'n Cheese with the addition of olives, feta and oregano.

Better Homes and Gardens® New Cook Book, 15th Edition is filled with practical solutions. Busy cooks will love the "Cook Once, Eat Twice" sections. Intended to make cooking efficient, these twosomes make incredible meals one night with leftovers that can be transformed into different dishes the next night. For example:
  • Savor flavorful roasted Salmon with Roasted Tomatoes and Shallots one night, and the next toss leftover salmon with fettuccine and cream sauce to make one-dish Salmon Pasta Toss
  • The lusciously sauced, crumb-topped Garlic and Thyme Roasted Pork makes a leisurely weekend dinner, but quickly turns into the stylish Roast Pork, Fig and Goat Cheese Sandwiches for a quick weeknight meal
  • A fresh and appealing pasta toss that's on the table in just 30 minutes, Pasta Margherita turns Mediterranean in the 15-minute Chicken and Spinach Pasta Salad
A thorough primer is included in the fully illustrated "Cooking Basics" chapter, which covers all manner of essential tools and equipment, as well as cooking techniques, measurements, pantry stocking tips, a refrigerator/freezer storage guide, spices and other essential ingredients—all complete with photographs to help even the novice home cook find their way around the kitchen. Finally, the editors have included more how-to photos and detailed step-by-step directions than ever, to ensure that every recipe created in their kitchen will work wonderfully at home.

SAMPLE RECIPE: PESTO-STUFFED PORK CHOPS
Use either bone-in or boneless chops to stuff as long as they are at least 1-1/4 inches thick. For thicker chops, extend the cooking time a few minutes.
  • Prep: 20 minutes
  • Bake: 35 minutes
  • Oven: 375 degrees F
  • Makes: 4 servings
  • 3 tablespoons crumbled feta cheese
  • 2 tablespoons refrigerated basil pesto
  • 1 tablespoon pine nuts, toasted (see tip, page 20 of the book)
  • 4 pork loin chops or boneless pork loin chops, cut 1-1/4 inches thick
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon dried oregano, crushed
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon dried thyme, crushed
  • 2 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
1. Preheat oven to 375 degrees F. For filling, in a small bowl stir together feta cheese, pesto, and pine nuts; set aside.

2. Trim fat from meat. Make a pocket in each chop by cutting horizontally from fat side almost to bone or opposite side. Spoon filling into pockets. Secure the openings with wooden toothpicks.

3. For rub, in a small bowl combine black pepper, oregano, crushed red pepper, thyme, and garlic. Rub evenly onto all sides of meat. Place chops on a rack in a shallow roasting pan. Bake for 35 to 45 minutes or until chops are 160 degrees F and juices run clear. Brush vinegar onto chops the last 5 minutes of baking. Discard toothpicks before serving. FROM GLOBAL GOURMET.com
