ABOUT THE AUTHOR:
Denise Burroughs was raised in the sun, she came from a large Italian family with very strong ties to their heritage. She was born in Rome, NY and moved to Miami, Florida in December of 1969 with her mother. Raised in South Florida, she attended school until 1983. Having two daughters from her first marriage, she remarried in 1995 and in 2004 moved to Tallahassee, Florida where she currently resides.
She’s the owner of a paint and body shop and a member of NAPEW (National Association of Professional & Executive Women 2007-2008). A love for cooking and a desire to share wonderful family traditions was put to paper to create Let’s Eat. There have been so many people who have inspired her in her life, but no one inspired her more than her mother. Many of the recipes in this book have been served many times over and enjoyed by family and friends. She is happy to share them all with you and hopes you enjoy every bite as they were all made with lots of love.
MY REVIEW:
LET'S EAT by Denise Burroughs is a very simple cookbook that I think would be great for young cooks starting out. Just married, or living on your own for the first time? Here is a handy cookbook to help make lots of yummy things in very simple ways. I liked that in the beginning of the book, Denise gives her "10 Tips from the Kitchen" which may seem to a seasoned chef/cook to be taken for granted. TRUST ME! These are things cooks starting out, as well as some of us who don't cook that often, can benefit from. Some are practical like "Add sugar to water when cooking corn on the cob. It sweetens the corn", while some are more philosophical like #10 which includes "...enjoy what you do! Your Kitchen is your way of self-expression and the Heart of your Home".
Burroughs also includes a page on "How Much of This Equals That?" which ALWAYS helps me as I NEVER remember! EX: One pound of sugar equals 2 1/2 cups. Another useful page is "Baking Tips". Warning about opening an oven while baking a cake, Denise writes, "Cold air can interfere with the rising of the cake". "Baking Substitutes" is valuable part of LET'S EAT, such as if you don't have one teaspoon of baking powder, you can use one-half teaspoon of baking soda plus one-fourth teaspoon of cream of tartar". I, myself, would have the baking powder more so than cream of tartar, but maybe others might not. Hints for "Preparing Marinades and Sauces" and "Is It Done Yet?" (I really need this part as I tend to over cook) are also invaluable to any level of cooking.
Recipes range from Denise's way to fry up chicken, to Grandma's Zucchini Stew, a yummy Manicotti, and fabulous Chocolate Italian Cookies. What fun for me to find a recipe for Tuna Casserole like I used to make over 37 years ago when my husband and I were first dating. I hadn't made it in ages and tried her recipe and it brought back many memories. Easy-peasy!
Lastly, Denise has several wonderful desserts but her funnel cakes and fried dough caught my interest (is there anyone who doesn't love them at the fair?). Denise's Grandmother used to visit her and make it and she talks about that as well as "Growing Up Italian". Her Great Great Grandmother passed down so many recipes she learned and enjoyed growing up like calamari over linguini, and Baccala, an unusual cod fish dish they made and ate on Christmas Eve. LET'S EAT is not a large cookbook but I think the practical hints and recipes are the kind of things we all can give a try and be successful with. As Denise says at the end of her book, "Mangiamo"!
