LAURIE DAVID is an environmentalist, author, and producer of the Academy Award–winning film An Inconvenient Truth and the HBO documentary Too Hot Not to Handle. She executive produced Earth to America!, a prime-time comedy special about global warming, which earned her a Gracie Allen Award for Individual Achievement. A trustee of the Natural Resources Defense Council, Laurie founded the Stop Global Warming Virtual March with Senator John McCain and Robert F. Kennedy, Jr. She was the first-ever guest editor of Elle magazine, two years running. In 2006, Laurie published her first book, the best-seller Stop Global Warming: The Solution Is You, and in 2007, she and Cambria Gordon co-authored The Down-to-Earth Guide to Global Warming, written for kids of all ages, which received the prestigious Green Earth Book Award in the nonfiction category. That same year, Laurie launched the Stop Global Warming College Tour with Sheryl Crow, where they visited college campuses throughout the Southeast on a bio-diesel tour bus.
She has received numerous awards, including the prestigious Stanley Kramer Award from the Producers Guild of America and a Humanitas Prize Special Award for An Inconvenient Truth. In May 2007, Laurie was honored with the Audubon Society’s Rachel Carson Award and the Feminist Majority’s Eleanor Roosevelt Award. She was also awarded the prestigious NRDC 2006 Forces for Nature award.

Laurie, a regular blogger on the Huffington Post, has been featured on The Oprah Winfrey Show, The Martha Stewart Show, Good Morning America, The Today Show, CNN, and MSNBC and was named a 2006 Glamour Woman of the Year. She has been profiled in People, Glamour, Vogue, Rolling Stone, Elle, Wired, House & Garden, Outside, The New York Times, and Vanity Fair.

KIRSTIN UHRENHOLDT grew up on a fruit-farm in Denmark, pickin’ n’ pruning and making pie. She then, by a stroke of good luck ended up on a cargo ship to Greenland, doing among other things a lot of dishes, a lot — more than you can imagine. She escaped and became a beer wench in Appenzelle Switzerland where they speak a language no one understands. Eventually she landed in L.A. where, lo and behold, she was kidnapped by some actors, some heavy rockers, and some kosher people. Presently she is living happily ever after.

CAULIFLOWER SWEET POTATO LATKES

Happy Hanukkah! When I was a kid I loved potato pancakes so much I would get a stomach ache before I ate them because I was so excited! And now it is time to get excited again for ‘tis the season of Hanukkah and latkes!

Here I tweaked them a little, replacing potatoes with the superfoods cauliflower and sweet potatoes. They are tasty, crunchy, pretty, and make me just as happy as a little kid!

YOU NEED:

    1 large head of cauliflower, about 1 1/2 lbs
    1/4 cup finely diced onion
    2 lightly beaten eggs
    3/4 cup flour (or corn starch)
    1 large sweet potato, grated
    2 Tablespoons chopped parsley
    1/2 Teaspoon salt
    Pepper to taste
    Vegetable or grape seed oil
 
COOK’S TIP:

To get the lacy crunchy edges grate the sweet potato lengthwise so you get long strands, for neat round little patties, grate finely instead.
   
TO MAKE:

Chop up the cauliflower and microwave in a covered bowl without water until easily pierced by a fork. Mash the cauliflower, then toss with the remaining ingredients, except for the oil.

In a large, nonstick skillet, heat a goodly drizzle of the oil over medium-high heat. Make the pancakes by placing 2 tablespoons of the batter onto the hot skillet, flattening them with the back of the spoon. Saute until the bottom of the pancakes are nicely browned – between 3 and 5 minutes; flip the pancakes and cook for about 3 minutes longer. You will probably have to make them in a few batches, so keep the first ones warm in a 200 degree oven, on a cookie rack placed on a cookie sheet.

Serve with tzatziki and cranberry sauce or apple sauce and sour cream.

YOUR CHILDREN CAN HELP TOO:
The kids will soon be on holiday break. . . and making cookies is a great way to keep them busy one afternoon.  They love being involved and cookie making for their friends and family is definitely a special treat.  For this recipe, kids can:
• Measure all the ingredients in advance
• Crack the eggs (teach them how and teach them good hand washing too)
• Taste the chocolate chips to make sure they are perfect (very important)
• Stir the dough
• Form the rolls to be wrapped in wax paper
• Create or draw the labels to go on the rolls – kids are very talented at that sort of thing

YOU NEED:
For 6 rolls (one for you and one for me and one for the neighbor…)

    * 24 ounces good quality chocolate chips (milk or dark, mix and match what ever you are in the mood for)
    * 5  cups flour
    * 1 teaspoon baking soda
    * 1 1/2 teaspoon salt
    * 3 cups (6 sticks) room temperature butter
    * 2 cups granulated sugar
    * 2 cups light brown sugar
    * 4 eggs (from happy organic chickens)

TO MAKE:

In a bowl mix the chocolate, flour, salt and baking soda.
 
In your favorite cookie making bowl, mix the butter and the 2 sugars, then have your kids vigorously mix in the eggs until they are tuckered out and it is all well combined. Fold in the flour and chocolate.
 
Pull off a few large pieces of wax or parchment paper.  Along the bottom of the short edge put a “roll” of cookie dough, ( You can use an ice cream scoop to do this). Tightly roll up the paper so you have a roll of cookie dough. Wrap it in foil and label it with the baking directions. It will last at least 3 months in the freezer.

COOKIE BAKING DIRECTIONS (to go on the gift labels):

1. Preheat your oven to 350
2. Do not defrost the cookie dough
3. Thinly slice your cookie roll with a serrated knife. Put on a buttered cookie sheet, keeping a good distance between each cookie as they do spread. Bake for 8-10 minutes or until golden.

Older members of a family (grandparents, uncles, aunts, et al) can play an integral role in improving a child’s self-esteem and sense of belonging by sharing family stories at the dinner table."

This is also something that I encourage. In the summer when my baby is home from college, we have what we call Mormon Monday. We all get together at my house on Tuesday night, eat together, plan games (we keep a running total of the winners on the frig) and visit and exchange news. All members are expected to come and we often have several different board games or WII games going at at time.

On the web site, I read that it's good for families to sit down and have dinner together and talk. Can teens sit down and eat without texting? Yes, the authors are right. Parents have a difficult time dealing with technology.

Love the blog and the book looks delicious. One of the best things I do is eat. Family dinners encourage conversation or at least leave room for it to happen since proximity makes for having ears to bend.

When my kids were little we were always going somewhere around dinner time, usually ballgames or other school activities, so sitting down at the table, unfortunately, was a rarity. It's one of my biggest regrets as a parent because I realized after the fact how important it is to set aside time for family dinners. My sister has a growing family and I would like to give her this book to impress upon her the importance of family dinners.
