THE ITALIAN DIET
100 Healthy Italian Recipes To
Help You Lose Weight and Love Food
BY GINO D'ACAMP0
ABOUT THE BOOK:
Do you love food but want to lose that excess weight? Celebrating the wealth of delicious ingredients that are naturally enjoyed by the Italians, Gino D'Acampo has gone back to his roots and chosen healthy and satisfying recipes that can be eaten with a clean conscience. The Mediterranean diet is made up of fresh fish, lean meats, pulses, olive oil, and a feast of fruits and vegetables, which explains why people who live there are thinner, healthier, and live longer. Leading dietitian Juliette Kellow analyzes each of GIno's recipes and constructs meal plans to help lose weight.

ABOUT THE AUTHOR:
The UK’s favourite Italian chef, Gino D’Acampo is familiar face through his many TV appearances and best-selling books.

A Neapolitan, Gino entered the Luigi di Medici Catering College at the age of 15, going on to work in restaurants across Europe before settling in England, where he took on Head Chef assignments before forming his own food company, Bontà Italia.

His TV career began with Good Food Live and BBC’s Saturday Kitchen and his instant popularity ensured that he quickly became a regular presence on Ready, Steady, Cook, Daily Cooks Challenge and Saturday Cooks. His own series followed, including An Italian In Mexico and Chef vs. Britain, before he went on to join the ITV flagship programme, This Morning. And viewers took him to their hearts, voting him King Of The Jungle by a huge margin in 2009’s I’m A Celebrity – Get Me Out Of Here.

Gino is also a successful cookbook author, his best-selling titles including Fantastico!, The Italian Diet and Gino’s Pasta.
RECIPE FROM THE ITALIAN DIET:
Bucatini Alla Carbonara
Pasta with eggs, pancetta and pecorino romano
Ingredients:
  • 500g of Bucatini (thicker spaghetti with a hole in the middle)
  • 250g piece of smoked pancetta
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of salted butter
  • 4 tablespoons of finely chopped flat leaves parsley
  • 4 eggs
  • 4 tablespoons of freshly grated Pecorino Romano
  • Salt and pepper to taste

Preparation:

Cut the pancetta into short little strips about ½ cm wide.

In large frying pan or a wok, over a medium heat fry the pancetta in the oil and butter for approx 5 minutes until golden and crispy. Stir occasionally and once ready, remove from the heat and set to one side.

Whisk the eggs in a bowl with ½ of the cheese. Add in the parsley and plenty of black pepper.

Cook the pasta in the salted boiling water until al dente. “To get the al dente perfect bite, cook the pasta 1 minute less then instructed on the packet”.

Once the pasta is cooked, drain and tip back into the saucepan.

Add in the pancetta and pour over the egg mixture. Mix all together for 30 seconds with a wooden spoon. (The heat from the pasta will be sufficient to cook the egg enough for a creamy and moist texture).

Season with salt and pepper and serve immediately with a few sprinkle of the remaining cheese on top.

I love Italian food when I go out, but I don't have many good Italian recipes so a cookbook that has healthy recipes would be perfect.
