A SAMPLE RECIPE FROM GIADA:
SPICED PUMPKIN-RAISIN COOKIES
Yields 24 Cookies
INGREDIENTS:
  • 1 cup all-purpose flour
  • 2/3 cup old-fashioned rolled oats
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon ground allspice
  • 3/4 cup raw sugar (such as Sugar in the Raw)
  • 1/2 cup canned pumpkin puree
  • 1/3 cup safflower or grapeseed oil
  • 1 tablespoon pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1/2 cup raisins
DIRECTIONS:
  1. Position a rack in the center of the oven and preheat the oven to 350ºF.
  2. Line 2 large baking sheets with parchment paper.
  3. In a medium bowl, stir together the flour, oats, cinnamon, baking soda, salt, and allspice.
  4. In a large bowl, whisk together the sugar, pumpkin puree, oil, maple syrup, and vanilla.
  5. Using a flexible rubber spatula, gradually stir the flour mixture into the pumpkin mixture.
  6. Stir in the raisins.
  7. For each cookie, drop 1 generous tablespoon of batter onto a prepared sheet, spacing the mounds about 1 inch apart. (Or use a mini ice cream scoop.)
  8. Using moistened fingertips, flatten each to a 2-inch-diameter round.
  9. Bake the cookies until browned around the edges and no longer sticky on top, 17 to 20 minutes.
  10. Using a metal spatula, transfer the cookies to a wire rack and cool completely.

I have most of Giada's cookbooks and enjoy cooking from them. This sounds like another must have. Thanks for the review and also for the recipe. It's pumpkin time so I may have to make some of these cookies.

I always love watching her show! Her food always seems to have fewer ingredients cooked simply, which is more my speed then some of the other chefs. I love the idea that this book includes her healthier dishes too. Yummy!

She is so gorgeous. The recipe loos easy enough for me since I am not so good with my cooking/baking (too lazy). I checked out her website and there are so many wonderful recipes there.
