SAMPLE RECIPE FROM SOUTHERN LIVING:
SMOKED SEA SALT CHOCOLATE-COVERED
TURTLES TO GIVE AS A GIFT!
- YIELD: 2 dozen
- COOK TIME:25 Minutes
- PREP TIME:25 Minutes
- OTHER:45 Minutes
- COURSE: Candy, Desserts
Ingredients:
- 1 (14-oz.) package caramels
- 2 tablespoons butter
- 2 tablespoons water
- 3 cups pecan halves, toasted
- 8 (2-oz.) chocolate candy coating squares
- 1 cup bittersweet chocolate morsels
- 4 (1-oz.) bittersweet chocolate baking squares
- 2 tablespoons shortening
- Smoked sea salt (see note)
Preparation:
Combine first 3 ingredients in a heavy saucepan over low heat, stirring constantly, until smooth. Stir in pecan halves. Remove from heat; cool in pan 5 minutes.
Drop candy by tablespoonfuls onto a jelly-roll pan lined with lightly greased wax paper. Freeze 30 minutes.
Melt chocolates and shortening in a heavy saucepan over low heat, stirring until smooth. Dip caramel candies into chocolate mixture, 4 or 5 at a time, allowing excess chocolate to drip off; place on lightly greased wax paper. Quickly sprinkle tops with sea salt. Chill until firm.
ANOTHER SAMPLE RECIPE:
RED VELVET CUPCAKES
- YIELD: Makes 2 dozen
- HANDS-ON:25 Minutes
- TOTAL:2 Hours, 18 Minutes
- COURSE: Cakes/Frostings, Desserts
Ingredients:
- 3/4 cup butter, softened
- 1 1/2 cups sugar
- 3 large eggs
- 1 (1-oz.) bottle red liquid food coloring
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 3 tablespoons unsweetened cocoa
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 tablespoon white vinegar
- 1 teaspoon baking soda
- White Chocolate-Amaretto Frosting
- Garnishes: white chocolate snowflakes, red candy sprinkles
Preparation:
1. Preheat oven to 350°. Beat butter at medium speed with an electric mixer until fluffy; gradually add sugar, beating well. Add eggs, 1 at a time, beating until blended after each addition. Stir in food coloring and vanilla until blended.
2. Combine flour, cocoa, and salt. Stir together buttermilk, vinegar, and baking soda in a 4-cup liquid measuring cup. (Mixture will bubble.) Add flour mixture to butter mixture alternately with buttermilk mixture, beginning and ending with flour mixture. Beat at low speed until blended after each addition. Place 24 paper baking cups in 2 (12-cup) muffin pans; spoon batter into cups, filling three-fourths full.
3. Bake at 350° for 18 to 20 minutes or until wooden pick inserted in centers comes out clean. Remove cupcakes from pans to wire racks, and let cool completely (about 45 minutes).
4. Pipe frosting onto cupcakes. Garnish, if desired.
