SAMPLE RECIPE: PESTO-STUFFED PORK CHOPS
Use either bone-in or boneless chops to stuff as long as they are at least 1-1/4 inches thick. For thicker chops, extend the cooking time a few minutes.
  • Prep: 20 minutes
  • Bake: 35 minutes
  • Oven: 375 degrees F
  • Makes: 4 servings
  • 3 tablespoons crumbled feta cheese
  • 2 tablespoons refrigerated basil pesto
  • 1 tablespoon pine nuts, toasted (see tip, page 20 of the book)
  • 4 pork loin chops or boneless pork loin chops, cut 1-1/4 inches thick
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon dried oregano, crushed
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon dried thyme, crushed
  • 2 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
1. Preheat oven to 375 degrees F. For filling, in a small bowl stir together feta cheese, pesto, and pine nuts; set aside.

2. Trim fat from meat. Make a pocket in each chop by cutting horizontally from fat side almost to bone or opposite side. Spoon filling into pockets. Secure the openings with wooden toothpicks.


3. For rub, in a small bowl combine black pepper, oregano, crushed red pepper, thyme, and garlic. Rub evenly onto all sides of meat. Place chops on a rack in a shallow roasting pan. Bake for 35 to 45 minutes or until chops are 160 degrees F and juices run clear. Brush vinegar onto chops the last 5 minutes of baking. Discard toothpicks before serving. FROM GLOBAL GOURMET.com

Many years ago on a crisp Saturday morning in December a man and woman exchanged vows in marriage. One of the wedding gifts that ended up in the hands of this newlywed couple was a Betty Crocker cookbook. The new wife and husband both found the cookbook to be one of the most valuable assets in the kitchen. Today this cookbook is showing some age and few food stains on some of the special pages that have been used time and time again. This new Betty Crocker cookbook would be a great addition to carry this couple through their retirement years. The “Cook Once, Eat Twice” would be especially helpful as the kids have grown up and departed. Of course this couple is really my wife Marcia and her not so handy in the kitchen husband -- me! We would never abandon our previous Betty Crocker cookbook as many family dinners were ate in sheer delight from the special recipes that we have come to love over the years. So if we win this updated version of the Betty Crocker cookbook we would make room on the shelf for these two cookbooks to remain together in our kitchen. Needless to say – we are fans of Betty Crocker cookbooks. Thanks for opportunity.

I've had a BHG cookbook that I've used for many years. My granddaughter is getting married and this would make a great gift for her. (She's already an excellent cook, but there are always things one needs a good cookbook for.)

I'd loved the refrigerator oatmeal raisin cookies in the old cookbook. It was my all-time favorite recipe. I'd hope that it were in the new one too so we could make them again!
